Pumpkin Potato Curry
This soup will soothe your soul with tasty ingredients and heavenly aromas. Don’t be afraid to experiment with new flavors and spices. The more fun you have in the kitchen the more you learn about yourself and develop your own cooking techniques.
Ingredients:
16 oz Organic Pumpkin Puree
1 large Carrot diced
2 small Yukon potato diced
1 large onion chopped
2 large garlic cloves diced
1 liter of chicken/Vegetable stock
1 teaspoon curry powder
Black pepper to taste
1 tablespoon olive oil
Instructions:
1) In a large pan, gently sauté the onion in olive oil and cook until soft. Then add the diced garlic cloves
2) Add the curry powder and cook for one more minute
3) Add all the prepared vegetables, pumpkin puree, and the chicken stock, then bring to the boil
4) Lower the heat to low, cover with the pan lid and simmer gently until the vegetables are tender
5) Blend the soup with an imerssion blender and season with salt and pepper
