Cashew Coconut Truffles

What You May Need

Vitamix

Chestnut Flour

Flax Seeds

Ingredients:

2 Ripe Bananas

2 Flax Eggs (2tbsp ground flax + 4 tbsp water)

1 1/2 cup Chestnut Flour

1 tsp Cinnamon

1/2 tsp Baking soda

1/2 tsp Baking powder

2 tsp Mushroom powder (optional)

 

 

Instructions:

    1) Preheat oven to 400F.

    2) Blend all ingredients except chestnut flour together in a high speed blender. Stop the blend until the consistency is smooth.

    3) Using a spatula, empty contents into another bowl, stir in chestnut flour.
    4) Bake in 6″ cake mold for 32 min or until toothpick comes out clean.
    5) Top with melted coconut butter and extra cinnamon.

    What are Chestnuts?

    Chestnuts come from a deciduous tree that is closely related to oaks and beeches. They all belong to the family Fagaceae. There are 9 different species of chestnut that can be found in temperate regions in the northern hemisphere.
