Banana Chestnut Flour Muffins
These gluten free muffins were all the rage when I was on my SIBO diet protocal. Not joke, I made them every single night and couldn’t get enough!
Ingredients:
3 small mashed bananas (2 large)
2 scoops collagen powder
2 eggs
½ tsp of baking powder
½ tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
4 drops of original stevia (vanilla cream)
Pinch of salt
1 ½ cup chestnut flour
Instructions:
Preheat oven to 425F
Mash Bananas with immersion blender until smooth
Add all ingredients together in a bowl with the chestnut flour being last
Spray small muffin pan with coconut oil
Bake for 18-20 min
