Breakfast Blondies

The best breakfast treat to eat on a Saturday morning.

What You May Need

Vitamix

Oat Flour

Flax Seeds

Ingredients:

3 Ripe Plantains

1 Ripe Banana

5 Medjool Dates

2 Flax Eggs (2tbsp ground flax + 4 tbsp water)

3 cups Oat Flour

1 tsp Cinnamon

1 tsp Baking soda

1 cup Water or Milk of choice

 

 

Instructions:

    1) Preheat oven to 375F.

    2) Blend 3 cups of organic oats into oat flour, set aside in large bowl. Add Flax, baking soda, cinnamon, and pinch of salt to bowl.

    2) Blend the plantains, banana, dates, and water together in a high speed blender. Stop the blend until the consistency is smooth.

    3) Using a spatula, empty contents into the bowl with the additional ingredients, stir until smooth.
    4) Add all ingredients to a 7×11 glass pan, top with sliced bananas, and bake for 30 min or until toothpick comes out clean.
    5) Top with melted coconut butter and extra cinnamon. Enjoy!
